Classic and delicious Vegan Sugar Cookies, these cookies are simple to make and perfectly tender. These Vegan Sugar Cookies are tasty as there are but are even better with some frosting.
I only used vanilla to flavour my cookies, but these cookies are also very easy to customize to create your own favourite combinations.
Vegan Sugar Cookies
Classic and delicious Vegan Sugar Cookies, these cookies are simple to make and perfectly tender. These Vegan Sugar Cookies are tasty as there are but are even better with some frosting.
Servings: 24 cookies
Ingredients
- 1 stick 112g vegan butter, soft
- 130 g sugar
- 1 pack vanilla sugar
- 1 tablespoon flax seeds
- 3 tablespoons water
- 2 teaspoons vanilla extract
- 250 g all purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Prepare the flax egg by mixing the flax seeds with 3 tablespoons of water, set aside for about 10 minutes.
- Beat the soft vegan butter with the sugar and vanilla sugar with a wooden spoon or with a hand mixer.
- Add the vanilla extract and flax egg and mix until combined.
- Mix the flour with the baking powder and salt and then gradually add to the butter mix and combine until a dough is formed.
- Roll out the dough between two sheets of parchment paper until 1/4 inch thick. Refrigerate for 30 mins.
- Preheat the oven to 350F / 175C
- Bake the cookies for 8 to 10 minutes, Remove from the oven and allow to cool completely before decorating.
Notes
For the icing:
120g Icing Sugar
1/2 tsp Vanilla Extract
1 Tbsp Soy Milk (or other non-dairy milk)
