Hermit Cookies are for many of you a traditional Christmas cookie. I think you should have my vegan hermit cookies all year around. Hermit cookies are delicious lightly spiced cookies packed with walnuts, raisins and dates. Dates and the brown sugar make these cookies so chewy and sticky-sweet.

Hermit cookies are delicious lightly spiced cookies packed with walnuts, raisins and dates. Dates and the brown sugar make these cookies so chewy and sticky-sweet.
Servings: 12 cookies
Ingredients
- 110 g all purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon all spice
- 60 g vegan margarine
- 100 g light brown sugar
- 1 flax egg
- 1 teaspoon vanilla extract
- 70 g chopped dates
- 60 g raisins
- 40 g walnuts pieces
Instructions
- Preheat oven to 360F (180C).
- Prepare the flax egg by mixing 1 tablespoon of flax meal with 3 tablespoons of water and let it rest for 15 minutes in the fridge.
- In a large bowl, combine flour, baking powder, salt, cinnamon and all spice.
- In a medium bowl, mix the the brown sugar, vegan margarine and vanilla extract together.
- Add the walnuts, raisins and dates to the dry ingredients and mix with a wooden spoon.
- Add the wet ingredients and mix well.
- On a parchment lined baking sheet distribute 1 tablespoon of cookie dough, about 3 cm apart.
- Bake for 10 - 12 minutes until edges are set but centres still appear moist.
- Cool on baking sheet for 2 minutes before transfer to wire rack to cool completely.
Notes
I like to soak the raisins and dates in boiled water for 10 minutes. The raisins are much softer and the dates almost melt into the cookie.
If you don't like raisins, I made the same recipe with chocolate chips and there are amazing.
