A delicious vegan oatmeal cookie packed with roasted peanuts and chocolate chips, these Vegan Oatmeal Peanut Chocolate Chip Cookies are so tasty and easy to make. It just requires a few ingredients which you probably already have in your pantry.
I think these cookies have the right amount of sweetness from the sugar and the chocolate chips, but if you think they are not sweet enough, you can increase the amount of sugar up to 80 grams.
These cookies are best served warm- therefore if you have any leftovers, I recommend heating them up quickly before enjoying them.
Oatmeal Peanut Chocolate Chip Cookies
Ingredients
- 160 g oats
- 80 g flour
- 60 g granulated sugar
- 80 g vegan chocolate chip
- 80 g roasted peanut pieces
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 120 ml melted coconut oil
- 160 ml unsweetened soy milk
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 390F (200°).
- Combine all dry ingredients to a large bowl and mix.
- Stir in the melted coconut oil.
- Add the soy milk and vanilla. Mix well.
- Shape 12 cookies using a spoon and put onto a lined baking tray.
- Bake for 10 -12 minutes until they are golden brown and firm.
- Let them cool down for about 15 minutes on a cooling rack and enjoy warm.
