Ingredients
- 10 Medjool Dates soaked for 10 minutes
- 1.5 tablespoons all natural peanut butter
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon agave syrup
- 1 tablespoon water
- handful of roasted peanuts
- Chocolate Glaze:
- 80 g vegan semi sweet chocolate chips
- 60 g coconut oil
- 1 teaspoon vanilla extract
Instructions
- Soak the dates for 10 minutes in hot water
- Blend all other ingredients in a food processor until you have a smooth, sticky paste.
- Spread the paste into parchment paper lined baking dish (using your fingers or a spoon).
- Top the paste with the roasted peanuts.
- Let it set in the freezer for about 30 minutes.
- Once set, cut the paste into bars, add more peanuts (optional) and sprinkle with more sea salt.
- Chocolate Glaze: Melt the chocolate chips and the coconut oil in a double boiler on low heat.
- Stir chocolate constantly until melted, add the vanilla extract.
- Pour the glaze over the bars, once cooled and the chocolate has dried, store the bars in the fridge.
