Lately, I’ve been obsessed with Vegan Oatmeal Raisin Cookies. They’re delicious, packed with juicy raisins and warm spices, making every bite a comforting delight. When I want something cozy and sweet but am short on time, I make a batch in just 30 minutes.
I use Swiss gingerbread spice, which brings back fond memories. Since it’s not available in Canada, I substitute with pumpkin spice and allspice. For a variation, swap raisins with vegan chocolate chips.
These Vegan Oatmeal Raisin Cookies are best enjoyed warm, straight from the oven. Reheat leftovers to keep them soft and chewy. They’re perfect for sharing with friends or enjoying with a hot cup of tea or coffee.
Vegan Oatmeal Raisin Cookies
Ingredients
- 80 g oats
- 40 g flour
- 40 g organic sugar vegan
- 40 g raisins
- 1 tsp gingerbread spice
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- dash of salt
- 60 ml organic coconut oil melted
- 80 ml unsweetened soymilk
- 1 tsp vanilla
Instructions
- Preheat oven to 390F (200°).
- Combine all dry ingredients to a large bowl and mix well.
- Stir in the melted coconut oil.
- Add the soy milk and vanilla. Mix well.
- Shape 6 cookies and put onto a lined baking tray.
- Bake for 10 -12 minutes.
- Let them cool down for about 15 minutes.
